Phillu, a distinctive cheese derived from either cow milk or yak curd, is a culinary speciality in Haa, particularly cherished in highland areas. The key ingredient is branches of himalayan birch trees, harvested in the fourth month, which is then skillfully dipped in milk. Through a meticulous two-week process of repeating this immersion, Phillu emerges as a flavorful cheesy substance.

This delectable treat holds cultural significance, especially in the highlands, and is renowned for its preparation involving cooking the cheese in butter. To savour the authentic taste of Phillu, one must venture to Haa, as it remains a local delicacy rarely found in urban centres like Thimphu.
